- This is a Passetoutgrains which means “toss it all in” in old local patois and is the name of the appellation for field blends of Gamay and Pinot Noir
- Whole bunch fermentation where the stems are left intact , gives the wine freshness and aromatic lift
- No added sulphur, unfined and unfiltered
- A real "vin de soif" (wine of thirst), serve slightly chilled
